I've been baking since I was little — standing in the kitchen with my great-grandma, learning her recipes. Most of what I make today is still built on those same foundations, just tweaked and evolved over the years with a whole lot of love. Baking has always been my happy place.
The NB Bakery really started when I was baking cupcakes for coworkers — just for fun. Then COVID hit, all the bakeries closed, and my then-3-year-old asked for an "ice cream candy cake." I was not about to let my baby go without. So I figured it out, made exactly what he wanted, and something clicked. Friends and family started reaching out. Word spread. And it just kept going up from there.
I've had the honor of baking for music artist T-Pain and other artists along the way — something I still have to pinch myself about. Now I'm bringing The NB Bakery to the Coles County community full-time, partnering with Everett's Place Play Café, and opening a storefront fall 2026. This is the dream, and we're living it.
